通过微热探针法测试装置研究了30个品种的果蔬热导率与可溶性固形物含量、含水率、密度和硬度等因素的变化关系,提出了一种基于BP神经网络的果蔬热导率预测模型,并根据误差比较分析进行了模型优化。结果表明,该优化网络模型具有较好的热导率预测效果,平均相对误差为1.11%,平均绝对误差为0.0057W/(m?K),可以用于果蔬贮藏加工业中果蔬热传递过程的计算。

以鸭梨为对象,采用核磁共振成像设备扫描获得轻微损伤鸭梨冠状面图像,使用Matlab软件完成图像预处理,采用自动阈值分割目标区域,并提取鸭梨层切面边界,最后采用角点检测方法检测鸭梨是否有轻微损伤。实验结果表明,核磁共振成像技术对水果轻微损伤的检测精度达92.1%,对正常和畸形水果的检测精度达100%。

基于能量守恒原理,推导了基于0℃贮运条件下剩余贮藏期的计算式。结合现有的实验数据,在0~20℃范围内,得出了8种蔬菜贮藏期与贮藏温度之间的关系式和在0℃贮运条件下的贮藏期预测方程。经过芹菜在0、2、4、6和8℃的储藏实验证明,理论推导出的贮藏期与实验所得贮藏期相差时间不超过2d。并综合信息无线发送技术,开发了具有库存管理功能的果蔬贮藏期预测器,实际运用结果表明,预测结果具有较高的精度。

微热探针法测试热导率系统已被广泛应用于食品材料热导率的测试中。但是,由于实验条件或实验设备的限制,基于理想的线热源瞬态模型测量原理得到的结果会产生某些测试误差。针对测试误差,从探针输入电压、加热时间和样品的径向尺寸等装置操作参数的选择着手,通过实验,得到装置系统测定中输入电压的最佳值为2.5~6.5V、加热时间最佳值为20~50s。最后通过实际测试,得到了番茄果实在不同成熟阶段的热导率变化规律。
